The ingredients needed to make Simple Jambalaya:
- Provide 2 tbsp of olive oil.
- Get 1/2 cup of onion, chopped.
- Provide 1/2 cup of green bell pepper, chopped.
- Get 3 clove of garlic, minced.
- Get 1 lb of andouille sausage, sliced in 1/4" pieces.
- Use 1 can of stewed tomatoes, chopped (I like mine small).
- Take 1 cup of chicken broth.
- Prepare 3/4 cup of long grain rice.
- Prepare 1 pinch of salt &pepper.
Instructions to make Simple Jambalaya:
- Heat oil in large sauce pan over med-high heat.
- Add onion, bell pepper and garlic. Saute until tender.
- Add andouille, tomatoes, broth and rice. Bring to a boil.
- Reduce heat to low-med and cover. Simmer for 25-30 minutes (or until rice is tender).
- Salt & pepper to taste.
